I rarely buy cookbooks, but sometimes things just fall in my cart at Costco (how does that happen?!). I’m just glad this time it was this cookbook and not something weird like 5 gallons of glucosamine.
Anyway, I’ve been working my way through this book (starting with the desserts, of course). This weekend I made the lemon cream with blackberries, slightly altered.
2 T lemon and orange zest
1/3 c lemon and orange juice
1 c silken tofu
1/2 c agave nectar
blackberries and mint leaves for garnish
Puree everything in a blender (reserving the blackberries, mint, and a few tablespoons of the zest for garnish). Scoop into adorable bowls, garnish, serve with adorable spoons. Done and done!
